Has anyone put modern tyres on a frame similar to this? This is a 29er 2.25 mtb tyre deflated (wouldn't fit with air in it but wanted to see if rims would fit) but want something more gravel (and that will fit) im thinking nothing over 40mm?

Fo’ sure! Whatever works for you will be fine, but you’ll often have issues with brake caliper clearance or pad location if using different wheel sizes.
Old frames can be flexy so be wary of running anything too close to stays.
Edit: I doubt you’ll get anything close to a 40 in there!
Highly unlikely that 40mm tyres will fit on this bike. Normally the widest that fits is 28mm.
I’ve got two vintage frames and the widest they’ll take is 28.
I have 38s in my vintage frame gravel bike I woudnt feel comfortable putting anything bigger than that in
Running the easiest gear, the chain will probably touch the tire then?
