I went for a quick ride yesterday and a few kilometers out I hear air gushing. Before I now what happened, I had a flat on my rear tire (pumped to 5.1 bar just before this ride, Muc Off sealant, Continental GP 5000S TR 30").
This is my first time getting a puncture. I was expecting a relatively small puncture like this to get sealed? The seal flush out, but didn't to much.
Do I have wrong expectations regarding tubeless?
Also, is there anything I can do to recover the tire or is it gone (I planned a long tour today, which I would like to ride…).
Shouldn't this seal effectively (it didn't)?

Buy some Dynaplugs. I use on my tubeless for anything the sealant won’t take care of.
Cut looks quite large. I’d put a tire patch on the inside. Also, how heavy are you? 5.1 at 30mm sounds high. I’m 76kg and run 4 bar on that tire.

That gash is too big for sealant to deal with, imo.
Well, that’s a slice / cut, not a puncture. And no, that’s not “relatively small”, but rather large.
Silca made a good video explaining the difference between a cut and a puncture: https://youtu.be/lEHwQ2yr84w
It to much pressure in the tire for the sealant to close it. The sealant just gets pushed out. I would suggest plugging it with a rubber plug, on your ride, because it’s quite a big hole. And when you finished the ride patch the tire from the inside.
