Mainly confused because my new (used) bike has a 42t Sram front chain ring that says 11 speed, but my RD is an ULTEGRA 10 speed and the cassette is 11-23t.
Obvs the goal is bigger cassette but I am unsure of my limitations on how big I can go and recommended parts.

That’s a tiny cassette. You’d benefit from a 32t or a 36t. You could use a Roadlink adapter to space your derailleur out further to accommodate a bigger cassette.
Cassette size would be limited by your rear derailleur type, short/long cage for example. I would look up specs for your derailleur and find out largest cassette it will accept.
what is the rear derailleur model number?
Ultegra RX RD with long cage might be an option? But it only goes to 34 or 36 in the rear i think. other option: GRX RD? there is a specific 10 speed one (GRX400) but i think the GRX800 shift quality is nicer. i guess most modern (10 speed or more) rear derailleurs will work, they have the same ratio as shimano road RDs and enough range of motion for 10 speed cassettes. so do the grx ones.
