Would this bike (custom Voodoo Aizan) be a sensible buy for daily commuting and light/medium bikepacking?

I've recently had to part with my old bike (Carrera vengeance) and have been looking for a replacement, which I will primarily be using to commute around a city, but also hope to be able to use for longer distance bike packing (mainly on roads or calm trails for longer distances such as few-day journeys cross country), and found this Voodoo Aizan kitted up with various replacement parts going for £260. However I had a few questions before purchasing (as is quite a lot of money) Attached is the list of the parts the previous owner has kitted the bike out with (second image):

• I've been cycling pretty much daily for commuting for the last 5 years and have been confident doing my own bike maintenance on my old bike, but have never had something this fancy (hydraulic brakes etc) so wanted to ask how easy maintenance on such a bike would be to do myself and how often/how expensive I should expect maintenance to be.
• would I actually need a bike with parts of this quality for what I would primarily use the bike for?
• I also wanted to ask if this parts list and bike is actually worth the listed money or if id be better off getting a frame and similar parts and making the bike myself, especially if I wouldn't really need stuff of this quality.
• finally any reccomendations for good affordable bikes, or bikes to keep an eye out for as second hand options, that would be better suited to my needs would be much appreciated. Thank you for the help.
