What kind of rear derailleur? Shimano Claris ST-R2000 8spd shifts old Shimano 7 – 9spd RDs just fine and has a “normal” brake pull for cantis and sidepull brakes. Sucessfully made the switch with an Tricolor groupset.

Yes, but check for compatibility between components. Bar end shifters would also work, but again check for compatibility.
It could end up with changing front/rear mechs + complete drivetrain.
For a case in point, I’m currently building up a steel framed tourer & have been wrestling with this conundrum. I’ve finally settled on bar end shifters with a Shimano xt triple crankset & 10sp 11-36 rear cassette. Fully loaded touring is hard work in the mountains and I hate getting off & pushing it.
