I need a bike for daily commuting on paved roads and riding on grass/dirt paths multiple times a week. I'm not doing any crazy terrain, just local parks, but I don't want to feel like I'm fighting going over grass.

Unless you really like pink the Norco looks like a great choice. But it’s most important that the bike fits you properly. Test ride them all if possible

Def not 3. 1 looks best but frame is more dh oriented and not ideal for commuting. I think it maybe has newer/nicer components than 2 but 2 is what I would ride
