Max your cassette and tire size. If you live somewhere with hills and/or wet, consider switching to V brakes. Look for the largest handlebar bag that will fit in front without interfering with your hands or front tire, a top tube bag and a small/med seat pack. Don’t rely on the seat bag for more than a sleeping bag + an extra soft item or two. Going too big there will swing and handle awkwardly. A cx bike will handle light trips fine but just don’t push it to be a loaded touring bike.
