What does the manufacturer say the difference is? Including a link to these products would be helpful.
FWIW I have their stem and I quite like it.

Weight/ materials really.
The city is the middle one. The endurance has more suspension but weighs more and the pro has less suspension, but weighs significantly less.
What do the product descriptions say?
Looks like it’s shorter because you’ll be stopping and starting more often.
they say “city” is the most budget friendly, so I would say there is no difference and they are scammers
i got the pro as it had the spring plus elastomer and was a bit lighter. have to say it’s probably the most transformative addition to a bike i’ve ever paid for. love how it soaks up those bumps you don’t see on the road. luxury ride. no idea how the other models compare.
