Bought a shimano front V brake to put on my bike as I plan on doing more off roading and want to fit wider tires.
When fitting them, I noticed that the brake doesn’t fully disengage which leaves a dead zone/slack in the lever and I have to manually pull the callipers apart.
What am I doing wrong to cause this issue?

This brings me ptsd when I used to have Tim brakes. Sorry I can’t help you brother.
Have you tried oiling the pivot points?
They have adjustments for tension; perhaps those need adjusting?
Increase the spring tension on both arms of the brake. Ensure the housing/cable are not restricted.
Those two small black screws sticking out either side at the bottom need screwing in to add more spring tension on both sides.
Are you sure the cable isn’t getting caught on your bike stand?
Pool noodle lining issue if not new or wrong angle could be the rear noodle plus the length of the cable housing
