I guess is not fixable, so:
The hub is a Shimano Deore XT (FH-T780) 36 holes with a 10 speed cassette, rim brake, coupled with a 28" DT Swiss TK540.
I don't know how to lace a wheel properly so I was thinking to buy a new pre-builded wheel but I don't know what to look for, in an ideal world I would look for the same wheel but since yhe bike is 20yo and so are most of the bike parts I doubt that any of these are still in production.
What should I look for? I want something at the same quality level, same dimensions, same everything.
Can you guys tel me exactly what I need to buy so I can mount everything straight away and use my bike asap?
I live in Finland so I will probably search in every EU webshop that can ship here or ask some lokal shop if they can get me the stuff I need.

the best option is a new wheel it should be between 80-150$ for a comparable one much cheaper than even the labor to have one built
local bike shop should take care of this no problem
You need a wheel with a 19-622mm rim compatible with rim brake, the hub being hollow axle (10×135) quick release with 135mm OLD (not a thru axle!), and with Shimano “HG spline M” freehub body.

It’s worth noting: there aren’t any (that I’m aware of) NEW quick-release rear hubs that are offered without a flange for attaching a disk rotor. No big deal: you can definitely purchase and use a wheel built around a disk-compatible rear hub without mounting a rotor. Of course, you will need to purchase a wheel with a rim that’s ready for rim brakes!

Not sure what’s available in Finland. IMHO, I’d personally suggest you work with a local shop to have a new wheel built. This will be a bit more expensive but will also let you choose to use a good-quality (used) rear hub from eBay or a bike parts reseller without a flange for the disk.

Pay attention to what axle standard the new rim has, whether it is thru axle or more likely QR. I changed my rear rim recently and got a thru axle by mistake, but fortunately one can get end cap adapters to fit on QR. They are quite pricey tho, for what they are.
Have you considered asking your local bike shop to get a new hub and lace it into the existing wheel? This is what I did.
There’s really not much new and exciting in rim brake road wheels, but that’s a Deore XT wheel so a value model when released in 2011. The 135mm OLD makes it a bit more difficult to find. That was the rear hub MTB and Commuter dimension. The straight road versions of that era were 130mm OLD. Alex Rim DH19 that fit (135) are on discount at The Bikesmiths for $135.88 for the wheelset. Down from $189 list price.
