When I was replacing the cassette, this fell out from somewhere near the rear derailleur. I can't figure out what it is or where it came from. Any ideas?

Brake rotor pin?
Looks like a bolt that holds the larger cogs of the cassette together. Not necessary but it helps keep that group of cogs together when the cassette is removed from the FHB
For holding the brake pads maybe 🤔
Check the pins holding the cassette together and the pivot pins on the RD parallelogram.
