Check out park tool’s video on how to adjust a mechanical disc brake. The problem you’ve run into is you don’t just advance the arm as the pads wear. Release the cable, adjust the pad spacing, and then set the cable.
The arm is reaching the end of its travel and it’s falling off the track it rotates on. You need to release the cable and anchor it further down, then position the caliper and use the inner pad adjustment to narrow the gap between the pads. You may also just need new pads. Single piston calipers really are a pain to set up and maintain, unfortunately.
It’s a pretty low end brake with limited functionality. They are speced on bikes to hit a pricepoint. Almost anything legit and aftermarket will be an improvement.
