Looks like you need XS. Canyon sizing doesn’t compare to clothing sizing or whatever you’re familiar with. Size S would probably be just fine but could be a tad too big. You‘d probably need to reduce the stem lengths which compromises handling, so I’d go with their recommendation.

Keep in mind that if you inseam measurement is done at home it is almost certainly on the low side compared to reality. My own measurement was 3cm lower compared to the number I got when I did a proper bike fitting. I had this exact scenario, except between an L and XL. I don’t think you can categorically decide a size. I currently have a Grail in size L and I believe that is the right size for me. I’ve now ordered an Endurace and went with a size XL there after the bike fitting.
