It’s a shame you missed some of the amazing food in Dijon. There are a lot of Michelin rated restaurants and plenty that should be.
Are cafes and restaurants around place de liberation/square open on weekends (sat&sun)? And I know tipping is not mandatory in France but do they expect you to tip because you are tourists?
