
UPDATE: Couple things to note. Limit screws have already been adjusted and played with. B tension screw also. Derailleur is wireless do micro adjustments have also been played with.
As for everyone saying go to another shop, whilst I understand the sentiment, I live in Santa Cruz and this is one of the more reputable shops in town AND I've been going here for years. They are very trustworthy and mistakes are made. The whole shop is having a field day with it so it's not as simple as just adjusting limit screws unfortunately.
As the title states, purchased a brand new bike from Jenson and gave it a test ride. Everything works fine even all the other gears EXCEPT the highest sprocket.
Took it to the shop and they said it could be the cassette is bent, so Jenson sent out a new cassette and after I picked it up once again it skipped in high gear.
Took it back to the shop where the mystery continues.
Anyone else here run into the same problem?

That chain looks way too long!
That would cause it skipping on a small cog. Can you ask them to check that?
I agree that chain seems long, but I think you need a better shop. This should be resolved with derailleurs and hanger adjustment of B screw in 10 minutes at a good shop.
I would NOT go back to that bike shop. Cassette flatness is easy to check – just place it on a table. The chain _might_ be too long. Might also check derailleur hanger alignment. Either way its not rocket surgery.

All three need to be considered to diagnose properly! Take it to another shop.
The snack box is not compatible with the conti GPs, it’s creating a magnetic field that is pulling on chain.
I have the same bike with the same Apex groupset, no skipping in high gear. I’ve run the stock wheelset and this aftermarket one (but with same spec cassette). Excuse the dirt, just did a gravel ride.

Open up the Sram app and open the micro adjustment settings in your derailleur. See if microadjusting it by 1 to 2 points will resolve the issue.
Could be as simple as the limit screw is a half turn too tight. If the screw is touching the plate and the chain looks to be left of the chain on the cassette at the pulleys, loosen the screw a bit. Once it’s sitting on the cog appropriately, make sure there isn’t a gap left between the screw and the plate so it doesn’t try to shift into the frame.
