I visited PleincΕ“ur in Paris, a bakery that sources raw hazelnuts and transforms them in-house. Guided by head pastry chef GaΓ«tan Lucas, I followed the journey from raw hazelnuts to praline, caramelized hazelnuts, and their signature Paris-Brest.
