We should stop using Foie Gras. I like the taste, love the texture, but when i went to a duck farm and saw the Gavage process, i instantly hated.
I am very used to cattle farming, chicken, pigs, goats… always spent my summers in a farm and never had a problem with it since it is necessary for our survival and health. But Gavage is just torture for a luxury, non necessary food
It's impossible to offer an ethical service and offer foie gras. The entire practice is barbaric. I think foie gras really separates the chefs that give a damn, from the ones that say they do.
I tried a high quality vegan foie gras in France, and although the taste wasn't as good as a normal foie gras, it was still delicious somehow. It doesn't feel like foie gras, but kind of close still.

It reminds me of when I was at Writtle Agricultural College in 1983, and our animal husbandry lecturer said of veal calves, "These animals are bl**dy ill" because of their anaemic diet. I can't bring myself to eat veal.

From another restaurant I viewed today I had chicken liver pate which also had fois gras. Very Nice too Fallows recipe looks lush!! I love chicken liver pate!

I've eaten a lot of fois gras. The best meal I've eaten with it was a fillet steak topped with fois gras and cranberry. It was phenomenal!
