I love my ortlieb ultimate. Been rocking it for over a decade.
I use the Revelate Designs Sweet Roll and it works very well, lots room, and the webbing loops with flap give you lots of places to stash additional crap. Waterproof, opens either end, and gets smaller if you put less stuff in it.
Did you consider a framebag? It doesn’t affect your riding as much. I could easily reach in while riding wich was also nice. Did the Bartang valley and had to ziptie 2 ortliebs.
