What are some creative solutions for a tricycle rear assembly?

The bicycle co-op I volunteer at got a load of donations and a part of it was the components for a electric tricycle without the frame and components. We received the basket and mounting hardware, the front fork and wheel, as well as this and the wheels that go with it. Fat bike wheels.

It'll most likely go to the scrap pile as it takes up a lot of space in the shop, so if someone else doesn't have a use for it then I might grab it for a couple possible idea's.

I was curious what solutions you all have for assembly like this, with the fat wheels that come with it?
