I won’t call scallion, garlic, and ginger the aromatic base of Chinese cuisine. While they are widely used and can definitely provide the aroma, their main purpose is to neutralize the gamy or fishy taste of proteins. I’d say the aromatic base of Chinese food is “五香”the five-aroma. As the name suggests, it consists five spices-“八角”star anise, “丁香”clove, “花椒”sichuan pepper, “桂皮”cinnamon, and “茴香”fennel seed. Each region will obviously add to or replace certain spices based on the availability.
I don’t agree you using the China flag for Chinese. They are the mighty evil CCP and the R.O.C does still exists today on earth
