I was trying to undo this part with an Alan key and completely stripped it, I noticed there’s a spanner on the other side which hopefully I can undo it with.
Do you know what this part of the break is actually called, this little silver part that circled?

That hex is just for holding the brake post in the correct position while tightening the nut in back. Smooth post cantilevers are least top five in difficult things to adjust on a bicycle. Do yourself a favor and get different brakes. Threaded post cantis with spherical washers are a breeze and cheap as chips.
This is a light weight brake, with non standard parts without standard names.
That part you stripped is there to prevent the brake pads from moving while you torque it from the other side.
What model are these breaks?
