I'm 1.84 meters tall and my inseam is 93/94 cm, which puts me right at the limit of a size L for height but almost at the maximum for leg length. Am I that deformed? Is anyone else in a similar situation? Should I buy a size L?

186/92 on L and im at 8,5/10. Check the seat hight recommendations, I use 81,5 and it’s close to Canyons recommendation, it’s a good starting point.

6’4″ (193cm) with something like an 86cm inseam and I’m on a Large very comfortably. Perhaps even a Medium would have worked.

Your legs are notably long and above what would be considered average height relative.
As a result and given your uncertainty, you may want to consider bikes with more stack and less reach. Or to think of it another way, your version of a ‘race’ bike ‘likely’ looks like an ‘endurance’ bike. You may also want to consider frames supporting straight seat posts depending.
