I had another caliper that leaked at the piston and was replaced. I used the same hose with barb/olive but did replace the brass crush washer to install the new caliper. There is a bit of fluid there at the top of the silver fitting. Should I just cut the hose and use a new barb, olive, and washer? Or just crank down tighter on the silver fitting?

I’d tighten it down until you reach spec. Don’t over-tighten, this can break things.
If it still leaks, I’d take it apart, cut the hose, and set it all up again. Inspecting the olive seat, etc, along the way.
Just a crowfoot wrench and torque to correct spec. Park tool makes a good one: https://www.parktool.com/en-us/product/metric-flare-wrench-mwf-3?srsltid=AfmBOoqYdgAQsUcX1b0-CfC4vqzL5IqKxZ61tySrE52QMwquUYtsTXiV
