I got a group together from Dallas, TX to do a 3-4 day bike tour but they don't want to go too far. We found that the Boston Mountains in Arkansas would be really nice with good views. However, one of my friends has a bike that will only do well on paved surfaces. I see that there are a few nice ones on bikepacking.com:

These look to have gravel parts to them which probably won't work for us. Have any of you done variations of the trip avoiding the gravel parts? Also, if you guys have done this, what would be the minimum tire width you would say could do this?

I also found this route on Adventure Cycling: https://www.adventurecycling.org/routes-and-maps/adventure-cycling-route-network/arkansas-high-country-route

Does anyone have any information about what road surfaces to expect on the Adventure Cycling Arkansas High Country routes?

Also, if you guys know of any other good paved tours up to 7 hours hours from Dallas, we would be down to suggestions?

Why not go for the Katy Trail, and if necessary find a proper bike for the outlier?
