What kind of hydraulic hose olive is this?

This is an aid to use shift cables for routing the hose through the frame. I think it comes on ltwoo systems sometimes. It needs to be cut for installation after you routed the whole thing.

Also had this on my ltwoo. It does help on internal routing to get it out of the cockpit.
Since it is still there it means the hose is completely new, you can keep it. It also means there is fluid inside.
You should cut it after it was installed.
