I'm 5'10, 32" inseam, so I fall right on the top part of a medium according to the sizing chart for the Ultimate. I rode a Giant Defy ML 2025 that felt a little long, but everything else felt good. It could have been it was just a bit more aggressive than I am used to, but I'm not sure.
The only thing I am worried about is that if the bike does feel a little long, the integrated cockpit will make it difficult to shorten the reach, which I fear will be my main issue. Should I consider buying a small, or switching to the Endurace?
Below is the geometrygeek comparison between the Giant I rode and the Canyon

I am exact same height and Inseam, s on Both 2014 ultimate, 2019 endurace and 2025 aeroad. Canyons t Shirt sizing is a bit off. m feels way too stretched for me
The Canyon equivalent of the Defy is the Endurace. It is shorter in reach when compared to the Ultimate. If you are concerned about reach, why do you consider the Ultimate?
Im same height and inseam also, I bought a ‘24 Ultimate in size Small. No issue on my end for my 3-4 hour rides
