Looking to get a Grizl and having trouble determining sizing. I’m just under 6’, but only have an inner leg length of 31”. So, shorter legs with a long torso. They recommend small, but I’m worried about being hunched up on the bike.

You probably won’t. I don’t understand the us measurement but canyon bikes are pretty big size s canyon for example is size m for giant.
Im 5’11 and size M works well for me. I guess your body adapts to either size as youre pretty much in between sizes
