I am planning to do a bikepacking trip this summer and i've been looking at bike options.
Given that I am still a student and my budget is limited, I have found the following options:

Which one would you recommend? My trip will be within europe (Belgium-France/Germany).
If you have any other suggestions within the budget of these bikes, I highly appreciate it!

Grizl will give you far more flexibility in terms of road surface, as well as having the mounting points for bags. You can make it work with an endurance if you prefer but the grizl is better for bikepacking specifically
I was in the same quandary, and went with the Grizl, albeit the CF 8 Escape w/Eclips as my budget is a bit higher.
Main thing for me? *Bigger tire clearance*. I’ve only had it a week or so, so stock tires still, but the ability to put 50mm or 2.1″ on there seems nice for wandering trails and such when bikepacking. I’ll likely drop some 50mm less-gravely-gravel tires on there when I gear up for the adventures I’m planning for the late spring and autumn (summer heat in Spain is less than conducive to long outdoor trips).
Also, better mounting points and a slightly more robust frame. Don’t fall for the marketing, the Grizl – even the Escape – is *quite* aggressive in the geo. That being said, I did 3 hours (~45km, taking in Madrid, where I live) on it yesterday with very little issues, and I’m a neophyte cyclist.
So that’s my take – I had the same choice, and after some quick 20-minute test rides (there’s a Canyon Service Center here) decided on the Grizl. It also beat out Trek and Orbea after test rides, though not by that much.
Personally I would choose something g from a smaller producer – I know canyon makes good bikes but they rub me the wrong way. Something like a brother cycles big bro or a Stanton Sherpa or Tumbleweed stargazer imo are all way nicer – granted they cost a bit more but will outlast the canyon and have a timeless cool factor… if you really want to keep to that budget then maybe all city space horse, or surly preamble all come in around the same. If you plan to be on a variety of surfaces and long days in the saddle then the smooth ride of a steel frame will make it more enjoyable
If you plan on going off road , grizl no doubt. France depending on route choice can be… interesting, and the hardennes also have their moments ^^
Germany offroad wise is pretty good gravel in forests and all but can be steep depending on regio. If you say France , Germany and Belgium, Vosges , Black Forest ? Eifel ?
