Hi so i have found a rear shock that i think will fit my bike however it comes with this bearing eyelet type of thing and i was wondering if your able to remove the bearings and the cups for the bearings to just have a normal plain shaft

No. It requires a whole new damper shaft to change from a bearing eyelet to a bushing eyelet on rockshox shocks.
boy I feel you, the suffering in searching the right shock is crazy. I have bought a super deluxe ultimate for 300 euros lightly used but 230×60 instead of 230×57.5 (which basically only trek uses), but damn it took a long time-
