I’m a casual rider. I had a great experience running Continental Gatorskin tires on another bike. The max width they make Gatorskins is 32. Current bike tire is 35. Bike is a hybrid Trek
Going off pictures, will the 32 tires fit? I ride an asphalt road made for bikes and love that specific tire

Yes.
You betcha
While you have the calipers out, measure the rubber and see if it’s actually 35mm, tires are inconsistent like that. You may find that the 32 gator skin and the 35s currently on there measure the same in the end.
As far as proper sizing, you want the internal width of the rim, not the external, and then you can look up ETRTO tables or specific tire brand tables to see what they advise is acceptable. That said, I don’t see any reason why a 32mm wide tire would cause a problem here.
Zero issues with a 32mm.
With a 26mm external rim width, I’m guessing anywhere from 17mm to 20mm internal, so you probably can run tires as narrow as 28mm.
Gatorskin tires kinda suck, unless you like to ride on a tire as supple as a garden hose.
There are better options as long as you are changing tires. I would look at a Continental GP5000 AS for a much higher ride quality while still getting a lot of flat protection. Or a pair of Schwalbe Marathons if the GP5000 AS are too expensive.
That would be a downgrade in every way.
