I was wondering if any owners had some opinions on the above models. For context I'm looking for a bike to get around day to day (mostly short rides) and medium-long rides for fun on the weekends and weekend trips etc.
I haven't owned a Canyon before, My last bike was a fairly cheap Cube Attain (I forgot the exact model) which I made some small upgrades to.
I'm likely looking at new bikes, but am open to used (though most I see in the UK are medium frames and I'm a large).
I'm mostly looking for comfort long distance, am flexible on mechanical VS Di2 and am not looking to do anything competitive with the bike, though I do like the fee of a fast and light bike generally. The Endurace CF 7 Di2 LTD looks to be a solid option, but am also tempted by the Ultimate CF 7 Di2 AERO, Ultimate CF 7 and Aeroad CF SLX 7 Di2.
I'm currently in the US (but relocating to the UK) and as I understand it they are less common here so not sure there are a ton of options to go try some out.
Has anyone owned or ridden a few of these models? I'd welcome all and any thoughts.

I would be doublechecking your size before immediately jumping to a Large. I am a 54 in most sizes, an M in Giant and Trek and am firmly in the middle of S for Canyon.
From your description, the Endurace sounds perfect. If you arent racing, or racing hills, the endurace is a little relaxed, but still a very capable and fast bike. Its fit is a little more relaxed than the aeroad for example, and can fit larger tires. For you, I think the endurace is the way to go.
Here is my data point: height 182 cm, inseam 87.5 cm. My bike fitter told me to choose a size large. I feel extremely comfortable riding Aeroad SLX 7. The only thing is the stem length is about 10 mm longer than I expected. I took a few rides to adjust the difference. Overall, Aeroad is a decent bike!
Endurace sounds like the fit for your needs. I would go to a bike fitter or talk to the customer service people directly at the site. This is a lot of money so make sure it is an informed one from people who can really help you
I recently bought a endurace cf SL disk 7 and am enjoying it. I’m 63 years old and wanted comfort for longer rides. Have done a 40 mile run last week and no issues. 6-4, 210 lbs, xl fits me well. New tubeless GP 5000 s tr tires at 65 psi and it moves / handles well , good luck on your hunt. I paid 1500 usd for a clean bike with only 200 miles on her, pricey but worth it to me.
