I want a pannier tub that I can just drop a backpack in. Was looking at the Specialized Coolcave, but they seem to sold out everywhere in Australia. The backpack is too big for a regular large pannier.

Not exactly the same, but it might be worth looking into those pannier shaped baskets? They’d do pretty much the same job.

Just give it a google. There are all sorts of DIY designs using hardware store parts plus also some kits with nicer quick release rack mounts.
The [Sunlite Pannier Mesh Bottom Basket](https://www.modernbike.com/sunlite-steel-mesh-bottom-pannier-basket-black) is the best, IMO, if you can fit it without heel strike.
I use [this bracket](https://www.modernbike.com/product-2126310751) to keep it firmly in place. If you don’t want the basket for a ride, it comes off with a hex wrench in seconds.

Why not go for the original, the Velobin?
It has a lid and is waterproof and you can lock it.

Ah you are looking for a “grocery pannier” I think. Most are a folding style, but that’s better than this imo
Pannier Jerry can, but actually 20L water container would do.
