I always hated how I had to reach around my bars to shift up with my SRAM shifter. I tried all sorts of positions and even different bar clamps. Nothing really seemed to fix it. I prefer most things SRAM drivetrain related but I rode a Shimano drivetrain and instantly loved how the Shimano shifter can shift up in two directions. So I ordered an XTR shifter and got it paired with my SRAM GX drivetrain!
Haven’t taken it out yet but on the bike stand, everything seems to be working good!

As long as the indexing on the shifter matches up with what the derailleur/cassette needs, why not?
Report back after you’ve put some real miles on the combo.
When AXS first came out, I saw a couple people using sram derailleurs with Shimano cassettes, because Shimano had better shift ramps. I approve of mixing components to achieve exactly what you want 👍
I do run shramgura breakes on my DH
Shimano XT Levers with maven calipers and Magura Discs
Pretty wild combo
