What could be causing the rear derailleur to kick/jump like this so regularly? None of the links appear to be stiff but I can see it not rolling smoothly on to the cassette

It’s catching the upshift teeth on the next gear. Move the derailleur outbound with the barrel adjuster or electronic equivalent.
