Could you? Sure.
But why? It doesn’t look like you are doing MTB things with this bike so what sort of advantage are you hoping to gain by doing this?

Doing so slackens the head tube angle, and so puts more stress on the head tube/downtube joint. Not something I’d ever worry about on a good bike or riding gently, but something to consider on a marginal bike ridden hard.
