I have an all weather brooks saddle and love it because of the retro aesthetic. For bars I just have wide flats. Makes it a bit more comfortable for daily rides imo.
Have you thought about gear ratios and such? There are online guides to help with the choices.

Im sure some will disagree with me bc it has black wheels but i think a silver stem/seatpost/crank combo would be nice since you already have a silver headset.
