Three different pics showing Ultimate in gray and Endurace in yellow. With the different geometries and a 2.5mm trivial spacer under the Endurace stem, how are the bars roughly at the same height? I’d expect the Endurace to be positioned higher.

Not sure I guess. I do know the Endurace is more aggressive than other endurance bikes out there.
You could compare with an online geo comparator, many things in the geo can have an impact on the bar height, are the bottom brackets the same height?
Maybe, different tires
These do look like the exact same bikes

Comparison of 2023 CF SL versions in size S. In this size, the Ultimate is 15mm longer and 8mm lower.
Can play about with other model years and sizes.
As others said, putting the bikes side by side and taking a photo is not a really good way to spot differences of 1 or 2 cm, particularly when what you “see” in terms of height of handlebar is affected by tyre size, and the BB drop also contributes to the bike geometry.
😂 maybe you discovered the lie. Those look like identical bikes.
What’s the ride feel difference? Can you tell the one is significantly different from another, other than being more stretched out on the Ultimate?
Btw love your home, great taste for inner decoration
Because bikes are almost the same: https://i.imgur.com/TpL5BhT.png
When you read how someone swapped Endurace to Ultimate and “felt so much faster and quicker” its just placebo effect of a new toy, bikes almost the same
