This is my first day of trying clipless, went with crankbros easy release cleats with doubleshot 1 pedals. I'm having a hard time twisting out when clipping out but easier for me to twist in.
Is twisting in okay and safe?

Lots of people do it. For a variety of reasons. Non standard but works fine.
Mate that’s the way it’s done. Not familiar with those pedals specifically but you should be able to adjust the clip out tension to make it a bit easier. Just remember while you’re learning to always clip one shoe out before a stop. It’ll save you the embarrassment. Though frankly I think the shame is how most people learn.
Aim!! Don’t hear that too often, a nice surprise!
i do it on both my road and mountain shoes (bad habit, i know). just be aware that depending on the crank position and maybe cleat setback that clipping out inwards can cause the rear wheel to hit/ingest the shoe.
Set b the clip in / clip out tension as low as it goes. Then if you are pulling your shoe off the pedals, start to tighten them.
