I ripped the thread on the one of the eyelet when I trying to adjust the pannier rack because it's off centre. so now I only able to use the left side. do you think this setup okay? it's definitely not as stiff as it was, but should be enough considering the rack is made of steel, even the mounting rod.
I should've use a rack with better mounting fit.

Where are we looking at?
Teoretically it should laterally be similarly stiff as with two struts. All of the weight is on the lower bolts near the dropout anyeways, while the strut is just to prevent the rack from rotating backwards or firwards and for lateral stiffness. lateral stiffness is dependent on the triangles between mounting points when viewed from the front. Before there were two small triangles one on each side. Now you have one big triangle, which should be similar in lateral stiffness to the two small ones.
This does not say anything about the strength of the Brazeon though. Since you stripped the other, that tells me you did not pre-bend the struts but tried to forced them to bend by clamping them down. It is not the racks fault, it is your fault as having them under constant spearing forces is a bad idea. Use a tube bending jig or vise to make all the bends so that you don’t put any additional stress on the braze ons.
If the other one is also damaged a bit already, you might want to use a p-clamp. Also you could use a helicoil to repair the threads, but i would be careful to extend the holes in a boss of an aliminium frame.
