Trying to shred (blue trails lol) west Michigan this winter and also ride in the warmer seasons. I love this bike and I’ve had a lot of fun since I bought it in July, so I’m ready to put money into it. Pics from a recent ride.
I think you already did the best wintertime upgrade available.

I don’t find neoprene pogies to be warm enough. I have a pair of the RockBros insulated mitts. Just as an FYI if you find your hands getting cold.
I have also found a dropper post to be very useful for getting on and off in deep snow. When I am mountain biking I use my dropper posts almost more than my shifter. But fat biking, I use the dropper a lot less, because the terrain is generally more mellow. Because I am on an older fat bike (an OG Moonlander) and can make do using my post less, I have a locally operated dropper. I didn’t want to install a post that is worth half the value of my bike. I have KS ETEN. It’s a decent compromise for a bike I didn’t want to put money into.
But if this is a year round bike and the only bike you ride, you might consider a better dropper.
Definitely pedals. Get yourself some Dirty Deftraps, PNW Ranges, OneUp Composites or something similar.
I would also be replacing the saddle. That thing makes me hurt just looking at it. But if it’s not bothering you, no need to change.
