📝 LOW-CARB THANKSGIVING STUFFING RECIPE

🎯 This recipe has TWO STEPS:
STEP 1: Make the low-carb bread
STEP 2: Turn it into traditional stuffing

🔹 STEP 1 – HOMEMADE LOW-CARB BREAD

INGREDIENTS:
• 1 cup (100 g) almond flour
• Pinch of Himalayan salt
• 2 tablespoons (20 g) flax seeds, ground in a coffee grinder
• 2 tablespoons (20 g) psyllium husk powder

• 1 teaspoon (4 g) baking soda
• 1 tablespoon apple cider vinegar

HOW TO MAKE THE BREAD:
1️⃣ Grind the flax seeds in a coffee grinder
2️⃣ Mix all ingredients well
3️⃣ ⚠️ CRITICAL: Let it sit for 10 minutes to allow the psyllium to absorb liquid
4️⃣ Spray the pan with vegetable oil
5️⃣ Bake for 30-35 minutes at 356°F (180°C)
6️⃣ The bread is ready – let it cool completely before cutting

🔹 STEP 2 – THANKSGIVING STUFFING

INGREDIENTS:
• 2 tablespoons (30 g) butter (for vegetables)
• 1 medium onion – 1 cup (120 g) diced
• 2 celery stalks – ¾ cup (80 g), diced
• 2 cups (150 g) mushrooms, diced
• Salt to taste
• 1 teaspoon garlic powder
• ¼ teaspoon ground nutmeg
• ¼ teaspoon ground cardamom
• A little fresh thyme (or ½ tsp dried)
• A little fresh rosemary (or ½ tsp dried)
• The cooled bread from Step 1
• 2 tablespoons (30 g) butter (for frying bread)
• ½ cup (120 ml) chicken broth (low-carb)
• 1 egg
• Extra butter and olive oil for topping

HOW TO MAKE THE STUFFING:
1️⃣ In a pan, melt 2 tablespoons butter
2️⃣ Add diced onion, celery, and mushrooms
3️⃣ Sauté until soft and golden
4️⃣ Add salt, garlic powder, nutmeg, cardamom, thyme, and rosemary
5️⃣ Set aside the vegetable mixture
6️⃣ Cut the cooled bread into cubes
7️⃣ In another pan, melt 2 tablespoons butter
8️⃣ Fry the bread cubes until golden brown on all sides
9️⃣ Place the fried bread cubes in a large bowl
🔟 Add the sautéed vegetable mixture
1️⃣1️⃣ Pour in the chicken broth (low-carb)
1️⃣2️⃣ Add 1 egg
1️⃣3️⃣ Mix everything well until combined
1️⃣4️⃣ Grease a baking pan with olive oil
1️⃣5️⃣ Spread the mixture evenly in the pan
1️⃣6️⃣ Top with a little butter and a little olive oil
1️⃣7️⃣ Bake for 20-25 minutes at 356°F (180°C)

  1. Hello for Florida – I love your channel! I just finished baking the bread and was concerned because I used chia seeds 1:1 to replace psyllium (I didn't have any). My mixture was very wet so I added another 1/2 C. of flour. When I poured it into the pan, it was more like batter than dough. OMG, it still turned out perfectly and tasty too. Thank you so much for all you share with us to keep us healthy. 💜

  2. Ok, this is my favorite bread recipe so far. It's deee-lish. It's light and airy and tasty. That's a good base recipe, and I plan on adding some herbs and other flavors to experiment. The only thing I noticed about all your bread recipes is that I can't get mine to rise as much as yours do. Other than that, I've loved the ones I've done so far and this is my favorite.
