The Shimano looks like 6400 = late 80’s
I don’t remember that paint job, my Guerciotti was solid red.
This may help:
4th generation; New 600EX (continuation of 6200 series part numbers), 1984-1987. Aesthetic re-design, a compromise between 600EX and 600AX. SIS upgrade in 1986.
5th generation: 600 Ultegra (6400 series part numbers) 1988-1997, a.k.a, 600 tricolor. Upgrade to 7 speed, SLR brakeset and cosmetic change. HyperGlide upgrade in 1990, dual pivot brakeset in 1991. 8 speed and STI upgrade in 1992.

Here’s a Gios Torino with the same paint job and why they are painted that way.

And my Gios was blue:-)
Is there a serial number, maybe on the BB shell?
I don’t have any relevant knowledge about that bike but that paint job absolutely rules. That whole bike rules tbh, just killer.
