The one that says “Granite” looks like it would be a Presta valve cap, with the slotted opening able to act as a tubeless valve core remover. Many tubeless valve stems have core removers designed into the caps.

The red one is to thread two hydraulic hoses together so you can use the old one to pull the new one through the frame.
Orange is a presta valve cap
The granite thing is a presta valve cap, the thing that’s has two male threads is to connect 2 hoses together to guide the new hose through the frame.
