I’d commit and cut down the fork. That’s such an improvement over the Cannondale Track I rode in the 90s. That cornflower blue with the steel fork

Bars, grips, pedals, saddle. I like adding accent colours to things either pick a colour to match to the frame or a completely different contrasting colour. Grips are always a cheap but colourful way to mix things up.
