They’re both good bikes. I would compare the components on them and pick the one that is better. Based on the price gap my money is on the trek having better components.
If they’re both running the same stuff pick the one you like the most.
Also worth mentioning that while canyon is a good brand and I myself own one, they are online only and do not have any in person shops like trek or specialized does. Shops will still service them since a bike is a bike but if anything major happens that requires canyon support then it will involve sending the bike to them rather than driving to the bike shop.

Neither, with close to 2k I would suggest looking at the used market and getting yourself a carbon frame with a better groupset. But of these I would get the trek

Get an Emonda ALR5 if your goal is speed. About the same price as the Domane.
