Pirelli Cinturato gravel S 40mm. Ass savers front and rear. So far so good. My crack is warm and dry- makes a big difference. Traction is great in all but the sloppiest mud. Rolling resistance on tarmac is minimal.

I also added the Ass Saver that attaches to the down tube to try to keep stuff off the chainring.
