Of course you can get it to work if you bring the handlebar back and up enough.
Interesting findings regarding the v brakes. I would have never eben tried that.

Why shouldn’t it work? This sub is full of exactly the same type builds.
Those brifters will work with cantilevers more effectively than full length V brakes. Cantilevers when set up skillfully, may feel spongy or weak in the stand, but have great stopping power when running. Conversely, V brakes will give a very crisp and sharp lever feel and bite, but offer low brake strength when riding!
