I am trying to remove this crankset and I can't for the life of me get the 8mm crank bolt out? I am turning it count rt clockwise which seems to be what the documentation indicates but it won't budge? Am I turning it correctly ? Do I just need some huge breaker bar?

Yes, that’s the way it turns. And you may need a breaker bar, yes.
And if you are putting the two levers (tool + crank arm) 180° opposite each other, like that, you’re going to have a real hard time putting enough force in with your arms. Put it at a much narrower angle and it’ll be easier to do.
On my next r cranks it’s counterclockwise. So it should be the same.
Get a piece of PVC pipe about 24″ long and break er loose it’ll take 10seconds

counterclockwise to extract
If it is really tough bust out the breaker bar and change your approach.
I would take the bike off the stand, put the left pedal against a step stool, then sit on the rear tire. That way you can use your entire body weight and don’t need to worry about bracing the cranks.
