
So every now and then I need to store my bike inside rather than in a bike shed. For some reason every time it causes my breaks to squeak. My apartment is not dusty or anything, and the humidity is the same or lower than outside. Anyone knows why it could be?

I think you’re already on the right track: It could be linked to humidity. It’s not a matter of whether it’s stored in a more dry environment, it’s a matter of whether the humidity is the same. The condensation is formed either way.
You will get condensation when you move the bike from a warm, dry environment just as well as if it was stored cold and humid.
Could be some surface oxidation/moisture buildup based on moisture condensing on cold metal in a warm room
