I’ve read that crank arms will either be loose and come off, or I should be able to knock/pry them loose without a special tool. I need to service my bottom bracket and after banging on it a bit I still can’t get mine loose. I dont want to damage anything so I stopped. Can anyone confirm that I should be able to get them off with some force?

You need the proper tool.
You need a crank removal tool, any bike shop should sell those. Also you could just ride around the block a couple times until it loosens by itself. But get the tool regardless. If you are servicing your bottom bracket, that is a very useful tool to have.
